Culture and vinification

  • Grape Variety: 100% Pinot Noir
  • Terroir : Millefeuille Flint and Villiers Limestones
  • Age of the vines : 40 years old
  • Vinification : The whole grape goes into the tank . Then, there is a short fermentation on the skins (about 2 weeks) with daily pumping-over for a maximal extraction
  • Free-run juice and press-juice are separately vinified but reassembled for the malolactic fermentation.
  • A vinification in barrels is not necessary every year. It depends on the vintage.

Tasting

  • Bright red color
  • Light and fruity
  • Red fruits (Raspberries, cherries, blackcurrants…)
  • Serve at 14°C
