Terroir : Millefeuille Flint and Villiers Limestones
Age of the vines : 40 years old
Vinification : The whole grape goes into the tank . Then, there is a short fermentation on the skins (about 2 weeks) with daily pumping-over for a maximal extraction
Free-run juice and press-juice are separately vinified but reassembled for the malolactic fermentation.
A vinification in barrels is not necessary every year. It depends on the vintage.
