« Quercus » means « oak » in Latin. The name given to this cuvee comes from its partial vinification in oak barrels.
Culture and vinification
- Grape variety : 100% Sauvignon Blanc
- Terroir : Kimmeridgian Marls
- Age of the vines : More than 50 years old
- Vinification : 1/3 in oak barrel, 2/3 in stainless steel tank
- Commercialization after no less than 12 months following the harvest
- Prestigious cuvee only produced during very good vintages
